Buzzin e Zaitoon (زیتون کا تیل)

Buzzin e Zaitoon is olive oil, in Urdu زیتون کا تیل (zaitoon ka tel), pressed from wild olives that grow in the mountains of Balochistan. These are not cultivated groves: the trees grow on their own, and the fruit is picked by hand, early in the season.

The olives are cold-pressed mechanically, with no chemicals, no heating and no refining. We describe it simply as cold-pressed olive oil.

Early-harvest olives give an oil that is golden green in the bottle, with a fresh, grassy aroma and a peppery finish that catches at the back of the throat.

How to use it

Use it as a finishing oil: over salads, drizzled on bread, stirred through daal, or spooned over grilled vegetables just before serving. It also works for everyday cooking at low to medium heat.

• Over hummus or a plate of chickpea chaat
• Whisked with lemon juice and a little honey into a salad dressing
• Brushed on naan or paratha straight from the tawa
• For gently sautéing vegetables and eggs

For deep frying, use a neutral oil instead. The fresh, peppery flavour is best enjoyed with little or no heat.

Storage

Store the bottle tightly closed, away from heat and direct light, and use it within a few months of opening for the freshest taste. The oil may turn cloudy in a cold room; this is natural and clears at room temperature.

Questions

Is Buzzin e Zaitoon extra virgin olive oil? We describe it as cold-pressed rather than claiming an extra virgin grade.

Why does it taste peppery? The peppery catch is typical of olives picked early in the season.

Is it the same as the zaitoon ka tel sold for massage? Olive oil sold for massage is often refined or pomace oil. Buzzin e Zaitoon is a cold-pressed oil made for the kitchen.
