Bairy Nectar (بیری کا شہد)

Bairy Nectar is our Sidr honey, known in Urdu as بیری کا شہد and in Roman Urdu as beri ka shehad, often spelt beri ka shahad. Bees make it from the blossom of wild Sidr (Ziziphus) trees in the Karak Valley and Mehran Shareef, Khyber Pakhtunkhwa. The trees flower only once or twice a year, so every harvest is small, and that rarity is a large part of why Sidr is so prized across Pakistan and the Middle East.

In the jar it is deep amber and dense. On the spoon it pours slowly, and the flavour is rich and buttery, with caramel and butterscotch notes and a long, warm finish.

We cold-extract Bairy Nectar and never heat it, so it keeps its natural enzymes, pollen and full aroma. Nothing is added.

How to enjoy it

The best way to taste it is on its own, a spoonful at a time. It is also lovely stirred into warm milk, drizzled over kheer, or with dates and walnuts. A jar of Sidr honey is a traditional gift at weddings and Eid.

• Spread thinly on warm paratha or toast
• Over thick yoghurt with chopped walnuts
• In a glaze for roast chicken, with a little lemon and garlic
• With dates at iftar

Storage and crystallisation

Keep the jar tightly closed at room temperature, away from direct sun, and always use a dry spoon. There is no need to refrigerate it. Sidr crystallises slowly, but in a cold room it may set. Stand the jar in warm (not boiling) water for a few minutes to make it runny again. Crystallisation is natural and does not mean the honey has gone off.

Questions

Is Bairy Nectar the same as beri ka shehad? Yes. Bairy, beri and Sidr are names for the same tree, Ziziphus, and its honey.

Why does Sidr honey cost more than other honeys? The trees grow wild, flower briefly and are spread across remote hills, so each harvest is small.

Can babies have it? No. Honey of any kind should not be given to babies under 12 months.
